Is there anything better than enjoying a creamy strawberry cheesecake? I do not think! Since strawberries are everywhere, I look at them all the time and want to eat them all the time. Especially when I see these delicious strawberry desserts with creamy vanilla filling and a whole bunch of strawberries on top that make me drool!

Well, I did, and now I'm excited to share the secret behind this makeover with you all. It tastes really good and it's so easy to make, so I hope you enjoy it too!
Vegansk New York Cheesecake
If you've been following me for a long time, you know that this baked vegan cheesecake isn't my first. I have several on my blog, but I love creating new versions because this creamy dessert is delicious. To me, this best vegan cheesecake tastes almost exactly like an authentic New York cheesecake, if not better.

I love cheesecake topped with crumble, but I also love topping it with fresh fruit. However, I have found that fruit, especially berries, taste best when they are in season. So when the season rolls around, I try to eat as much as possible. Either way, feel free to top your best vegan cheesecake with any fruit you like. How to make a vegan cheesecake
Easy vegan pie base
DoEasy vegan pie basesimply knead flour, sugar and vegan butter by hand until a dough forms. Then refrigerate for a few minutes to make it easier to roll out later. When it has cooled, you can roll it out and press it firmly into a greased pan. Also make sure to prick the bottom with a fork a few times before baking, so that the dough does not rise.
Easy cheesecake recipe
A true New York cheesecake is usually made with rich ingredients such as cream cheese, sour cream or heavy cream. But I made it with vegan quark, which is really just non-dairy yogurt drained. If you can't find it in the store, you can easily make it yourself. However, you can also blend the tofu until smooth and use it instead of the quark. Or if you have dairy-free cream cheese where you live, you can use that instead.
How to drain yogurt to make quark
To make quark, simply pour your favorite yogurt, such as coconut or soy, into a colander lined with a clean kitchen towel and let drain for 12 hours. If you use 750 g (26.5 oz) of yogurt, you will get approx. 500g (17.6oz) cottage cheese.

Raw material

- 1 ⅔ kop (210 Gram) mel
- ⅓ kop (70 Gram) sugar
- 1 pinch lobby
- ⅔ kop (140 Gram) vegan butter cooled and cut into small pieces
- about. 2-3 tablespoon frozen water

- 17.6 United Nations (500 Gram) Quarks in dairy products* Drained yogurt (*see recipe note) or asparagus tofu
- 1 kop (120 Gram) non-dairy cream cheese Electives
- 3/4 kop (200 ml) + 2 tablespoons vegetable cream or full fat coconut milk
- ½ kop (120 Gram) melted vegan butter margarine
- ½ kop (135 Gram) sugar or tasting
- ⅓ kop (45 Gram) + 1 tablespoon cornstarch
- 1 teaspoonful amount vanilla extract
- 1 lemon juice + lemon zest Electives

- 1 pound (450 Gram) fresh strawberries or other fruit
- ½ package red cake frosting * Read the recipe instructions
- 1 tablespoon sugar

Preheat oven to 355°F (180°C). Grease an 8- or 9-inch (20/22-cm) springform pan and line the bottom with parchment paper.
Whisk flour, sugar and salt together in a bowl. Add the cold vegan butter cubes and ice water and knead with your hands until a dough forms. Shape them into slices, wrap them in aluminum foil and refrigerate for about 30 minutes.
Then roll out the dough in plastic wrap (or on a lightly floured work surface). Place it in the prepared pan and press the dough firmly into the bottom and sides.
Prick the bottom with a fork a few times so that it does not rise during roasting.

Put all the cheesecake ingredients in a bowl and beat with an electric hand mixer until creamy.
(Video) How to Make Vegan Strawberry CheesecakePour the cheesecake mixture into the prepared springform pan with tart base. Tap the pan on the work surface a few times to remove air bubbles and prevent the cheesecake from cracking. Bake for approximately 1 hour.
Turn off the oven. Open the door slightly and leave the cake inside for another 10 minutes. Then slowly remove the cake and let it cool completely. After cooling to room temperature, refrigerate overnight.
strawberry topping
Boil the cake frosting with water and sugar or fruit juice according to package directions. Then let cool slightly.
Spread the strawberries over the cooled cheesecake and pour the glaze over the top. Chill in the refrigerator until the frosting is firm. Enjoy!
